I'm always on the look out for super easy and super tasty recipes that use fresh and healthy ingredients and this salmon recipe certainly ticks all those boxes.
15 minute prep-time 10 minute cooking time
4 salmon fillets (skin on)
100mls dark soy sauce
2 tablespoons of lime juice
2 tablespoons honey1cm piece fresh ginger, crushed
Handful of chopped coriander to garnish
Method:
- Whisk together the soy sauce, honey, lime juice and the crushed garlic and ginger until the honey has dissolved and pour into a dish large enough for your salmon fillets
- Lie your salmon fillets, skin side up into the bowl and allow to marinade for 10 minutes
- Heat a little olive oil in a frying pan and add the salmon and marinade sauce and fry for 7 - 10 minutes until sauce becomes sticky and salmon is fully cooked. (Fry skin side down for longer for a crispy skin)
- Serve with rice and fried courgette and garnish with coriander
- Why not keep a little of the sauce back before marinating so you can flavour your rice with it?
